RESTAURANT REVIEW: Ryoma Ramen at The Hub in Greenfield District Mandaluyong

Ryoma Ramen, a new Japanese restaurant, opened at The Hub in Greenfield District. They’re still currently on soft opening but Dane and I couldn’t resist waiting as we pass by the store daily during walks with our beagle, Milo. They’re now officially open and we’ve dined again not even a month after our first lol

First off, like other reviews. They served us water as we sat. So definitely a plus! We did have to ask for refills midway despite the store only having one other customer.

Chashu Tonkotsu Ramen - Ryoma Ramen at The Hub at Greenfield District, Mandaluyong - Grow Up, Grow Old

I’m a Tonkotsu Ramen girl so there wasn’t much thought needed when I saw Ryoma Ramen’s version of it in their menu.

The noodles still had a bite though both Dane and I prefer our noodles more firm than usual as the soup tends to cook them more while eating. The chasu pork is thin and tender though nothing notable. The egg has a nice light flavor though slightly overcooked but I may just be nitpicking.

The wonton is an uncommon addition as well. I didn’t love nor hate it, but it also didn’t add anything to the overall dish.

The broth though is *chef’s kiss*. There’s so much depth and it’s comparable with some of the more popular ramen restaurants, but cheaper.

Chashu Tonkotsu Ramen: P348 (with more pork and extra wonton), there’s a P238 version which we assume uses the same base soup but with less toppings.

Dane and I’s Rating: 4/5

Dane loves miso so he decided to go for Ryoma Ramen’s Kara Miso Ramen.

There is good depth to the base soup where miso is added, and you can take it up a notch with even more spicy miso on the side so you can control how much you want to put in.

Karamiso Ramen: P348

Dane and I’s Rating: 4.5/5

We’re also huge suckers of karaage so we ordered it as a side. Ryoma Ramen’s Karaage is served with two sauces. I believe one is a mix of garlic and ginger, while the other has a strong hoisin sauce flavor.

The chicken is tender but there also wasn’t much flavor. The breading wasn’t done very well as some of it was falling apart. It was also greasy when it was served, which made the underside of the chicken quite soggy by the end of our meal.

Dane thought it was average, but personally, I found it to be subpar. We’ve definitely eaten better chicken karaage in non-Japanese restaurants.

So, literally 3 weeks after, we craved specifically for Ryoma Ramen. So we’re updating this post too!

As mentioned in the second dish above, Dane loves miso. So it’s not surprising that he tried the non-spicy variety now. Lol.

The base flavor has so much depth and if you enjoy miso, you’ll enjoy this.

I dislike spicy food in general, but I prefer their Karamiso Ramen variety better.

Ryoma Ramen - Chashu Shoyu Ramen - Grow Up, Grow Old

I wanted to try something else during our next visit so I went for Ryoma Ramen’s Chashu Shoyu Ramen, which is a soy sauce-based flavor.

Compared to the Chashu Tonkotsu broth which was super rich, the Shoyu Ramen is lighter but still full of flavor.

My only complaint is it there’s just an umay (fed up feeling due to repetitive taste) factor near the end of it.

Dane also loves Gyoza. Me, not so much. It was freshly fried when we ordered, and compared to our experience with the Karaage 3 weeks prior, this felt less greasy. It seems they took our comment seriously, or again just a coincidence.

The flavor was okay, but nothing especially notable. As someone who doesn’t like Gyoza, this made me take another piece, which has never ever happened before. The flavor was more balance and there wasn’t any weird green aftertaste that I especially hate with Gyozas.

Pan-fried Gyoza: P199

Ryoma Ramen - Pan-fried Gyoza - Grow Up, Grow Old

Ryoma Ramen is very promising. The plating may not be the best but their ramen dishes are definitely up there in terms of flavor and bang for buck. It also took around 15 minutes for our food to arrive which isn’t bad at all, and all the staff are nice and accommodating.

During our first visit during their soft opening, they did ask us for our feedback before we left which we happily gave them as opinionated eaters lol. Our feedback included the option to choose firmness of the noodle, the greasy and soggy chicken, and maybe offering up individual plates for dishes like the karaage as they weren’t bite-sized.

We’re looking forward to eaating here again once they officially open! our succeeding visits!
